40g Oats
1tsp Chia Seeds
½ Grated Carrot (grated finely)
1tsp of Sultanas/Raisins
1tsp Ground Cinnamon
1tsp Ground Ginger
1tsp Walnuts/Pecans
1tsp Pumpkin Seeds
100ml (approx) of Milk of choice
Toppings of choice, I went for:
Yogurt
Nut butter
Ground Cinnamon
Method
Preheat oven on 180c.
Add your oats to an ovenproof bowl with the chia seeds, sultanas, nuts and seeds.
Grate the carrot and add it to the mixture with the ground spices.
Stir and then pour the milk over the mixture until it is covered.
Place on the second shelf of the oven and leave to bake for approx 15 minutes until the oats reach desired consistency (no longer milky but slightly crisp on top and soft in the middle).
Carefully remove from the oven, add your toppings and enjoy!
Because who doesn't like carrot cake for breakfast?!
