Granola
300g GF Oats
200g Flaked Almonds
100g Whole Almonds
50g Pumpkin Seeds
2 tbsp Date Syrup
50g Coconut Oil (melted)
The juice of 2 Oranges
2 tsp Ground Cinnamon
1 tsp Ground Ginger
Berry Jam
5tbsp Frozen Mixed Berries
2tbsp Chia seeds
2tsp Cinnamon
1tsp Ground Ginger
Zest of 1 Orange
2tsp Date Syrup
Coconut Yogurt - I used Coconut Collaborative

Add all of the dry ingredients to a bowl and mix.
Melt the coconut oil in a pan and then add the dry ingredients and stir well.
Pour in the date syrup and the juice from the oranges and continue to mix until well combined.
Spread the mixture over a baking tray and bake for 25 minutes at 180c. Check and stir every 5 minutes (it burns easily).
Once cooked, mix thoroughly. Leave to cool and add to your transportable jars.
Top granola with your choice of yogurt.
Add frozen berries to a pan on a low heat. Spoon in your chia seeds, cinnamon, ginger, orange zest and date syrup and leave to soften and simmer on a low heat until it reaches jam consistency. Leave to cool and then spoon on top of the yogurt in your granola jars.
Top with berries and any other toppings you would like. Enjoy.
