200g Tofu
1tbsp Olive Oil
1tsp Ground Turmeric
1 Small Shallot
1 Garlic Clove
1tbsp Peas
Salt & Pepper
Fresh Parsley
Chilli Flakes
Place the tofu on a plate and break up with a fork to make bite size pieces.
Finely slice the shallots. Crush the garlic.
Add olive oil to a hot pan and add the garlic and shallots. Pan fry until golden.
Gently add the tofu pieces and sprinkle over the turmeric, salt and pepper. Scramble as you would eggs.
Stir in the peas and add the parsley and chilli flakes.
Once cooked through, serve with your choice of sides and enjoy!
I enjoyed mine with finely sliced, baked sweet potato, smashed avo and veggies! A plant powered breakfast plate!
