1/4 Red Pepper
1/2 Small Red Onion
5 Cherry Tomatoes
1/2 Small Grapefruit
1tbsp Cashews (soaked)
2tsp Nutritional Yeast
1tsp Dijon Mustard
1tsp Apple Cider Vinegar
Pinch of Salt, Pepper, Chilli Flakes
Soak cashews 3 hours prior to making dressing.
Drain then rinse the cashews and add to blender with the other dressing ingredients. Blitz and set aside until salad is made.
Cook quinoa according to the instructions on the packet. Drain and season with salt and pepper.
Chop vegetables, feta, avocado and grapefruit.
Build your salad bowl.
Add mixed leaf to your bowl before topping with cooked quinoa and raw veggies.
Add the sliced avocado, grapefruit and feta, and sprinkle over the pumpkin seeds.
Drizzle on the cashew dressing and enjoy.
