Ingredients
4 Eggs
2tsp Coconut Oil
Vegetables of choice, I went for:
Broccoli
Sweet Potato
Courgette
Spinach
Peppers
Tomatoes
Homemade Tomato Sauce:
1/4 Red Chilli
1 clove of Garlic
Handful of fresh Basil
1tsp Tomato Puree
1 tin of Tomatoes
Salt & Pepper
Chop and bake the sweet potatoes.
Slice and stir fry the other vegetables until golden, leaving your spinach 'til the end.
Chop the herbs and spices for the tomato sauce. Add all of the sauce ingredients to a blender and blitz. Pour into a pan to cook through.
Once the sweet potatoes are cooked, add them to the pan with the other vegetables, pour in the tomato sauce with a dash of boiling water and simmer.
After 5-10 minutes, add the spinach and mix.
Pre-heat the grill at 180c.
Once the mixture is piping hot, make 4 egg sized holes in the sauce. Crack in your eggs and continue to simmer until they are almost cooked.
Place under the grill to cook the top of the eggs, and voila.
Serve as it comes, with a slice of toast or teamed up with some smashed avo.
What a cracking breakfast!
