5 Ingredient Banana Pancakes

Method
Spoon the flaxseed into a mug and add a dash of water, leave to thicken for a couple of minutes. Mash the bananas.
Whisk the eggs in a bowl and gradually add the banana and flaxseed mix. Pour in the milk and add the cinnamon. Stir well. Melt some coconut oil into a hot pan. Spoon small amounts of the mixture into the pan until your desired pancake shape is formed. Leave for a few minutes to set before flipping and cooking on the other side. Repeat for each pancake. Serve with your choice of toppings and enjoy!
Makes 2 portions
150g Buckwheat flour
1tsp Baking powder
100ml Oat milk (or milk of choice)
2tsp Maple syrup
1 Egg
Handful of Blueberries
Coconut oil for cooking
Added toppings of choice
Rinse Blueberries and then slice in half. Add all other ingredients to a blender and blitz.
Spoon the coconut oil into a hot pan and pour in your pancake mix. Add the sliced blueberries whilst the mixture is still wet.
Leave to cook for 2/3 minutes and then flip.
Once cooked on both sides, repeat for each small pancake and serve with your choice of toppings. Yum!
Orange and Cinnamon Pancakes
150g Buckwheat flour
1 Egg
100ml Oat milk
2tsp Maple syrup
1tsp Ground cinnamon
1tsp Ground ginger
Juice of an orange
Coconut oil
Toppings - I went for pecans, goji berries, coconut yogurt and a little extra maple syrup too!
Add the dry ingredients to a bowl and stir. Whisk the egg and pour into the bowl with the oat milk.
Drizzle in the maple syrup and squeeze in the orange.Spoon the coconut oil into a hot pan and pour in your pancake mix.
Leave to cook for 2/3 minutes and then flip.
Once cooked on both sides, repeat for each small pancake and serve with your choice of toppings. Delish!
