Ingredients
300g Jumbo Oats
100g Flaked Almonds
100g Coconut Chips
100g Walnuts (crushed)
50g Pumpkin Seeds
3tbsp Cacao Powder
1tbsp Ground Cinnamon
2tsp Ground Ginger
2tbsp Goji Berries
2tbsp Chia Seeds
2tbsp Maple Syrup / Honey
50g Coconut Oil (melted)
Weigh all ingredients.
Crush the walnuts then add all of the dry ingredients to a bowl and mix.
Melt the coconut oil in a large sauce pan and then add in the dry ingredients and stir.
Pour in the maple syrup/honey and continue to mix all ingredients until they are fully coated.
Spread the mixture evenly over a baking tray (or two trays if there is too much for one) and bake for 30 minutes at 160c. Check and stir every 5 minutes (it burns easily).
Once crisp, add the goji berries and chia seeds then mix. Leave to cool and store in an air tight container.
Serve with your choice of yogurt or milk and fruit. Enjoy!
