Ingredients
Makes 6 large cups
1tbsp Coconut oil
1tbsp Maple Syrup
1tbsp Boiling water
1tbsp Almond butter
Large Handful of Dates
Pinch of salt
Toppings of choice - I went for Frozen Berries and Coconut!
Method
Once softened, drain. Add to a blender with a pinch of salt and blitz until smooth. The texture should be thick like caramel.
Add the coconut oil to a pan and melt. Add the maple syrup and then gradually stir in the raw cacao powder. Mix thoroughly. Pour in the boiling water and add a pinch of salt, stir until raw chocolate mixture is smooth and thin like melted chocolate.
Gather 6 small bun cases. Pour a spoonful of the raw chocolate mixture into the bottom of each.
Add 1tsp of the salted caramel date mixture and 1tsp of almond butter. Top with an extra layer of raw chocolate.
Repeat in each bun case and then add your toppings while the mixture is still wet. Put bun cases in a sealed box in the freezer to set. Once set, store in fridge or enjoy from frozen!
