2 large Sweet potatoes
1 tin of Black beans
¼ cup dry Quinoa
2tbsp Quinoa flour (or any gluten free flour)
1 clove of Garlic
1/4 Chilli
1tsp Cumin
1tsp Paprika
Fresh Coriander
Juice of a lime
Olive Oil
Salt & Pepper
Method
Peel, chop and steam the sweet potatoes. Boil then simmer the quinoa for 20 minutes, adding hot water throughout if needed.
Chop the garlic and chilli and add to a bowl. Once the sweet potatoes are cooked, add them to the bowl with the spices and mash.
Once cooked, drain and rinse the quinoa and stir into the sweet potato mixture along with the rinsed black beans.
Add the ground spices, fresh coriander and lime. Sprinkle over the quinoa flour and mix thoroughly.
Season with salt and pepper.
Grease a baking tray with olive oil.
Mould the mixture into patties. Place on the baking tray and cook for 40 minutes on 180c, flipping after 20.
Serve with your choice of sides. I went for vegetable wedges and mango, avocado salsa.Yum!
