225g Oats
2tbsp Honey/ Maple Syrup
1tbsp Nut Butter
1tbsp Coconut Oil
Dash of Milk (of choice)
Dried Fruit of choice (sultanas work well)
1tbsp Pumpkin Seeds
1tbsp Desiccated Coconut (optional)
2tsp Ground Cinnamon
2tsp Ground Ginger
3 Apples (2 for topping, 1 inside)
For Baked Apples:
2 Apples
1tsp Honey/ Maple Syrup
1tsp Coconut oil
1tsp Ground Cinnamon
Method:
Finely slice 2 of the apples. Spread over a baking tray, lightly coat in coconut oil, honey and cinnamon and bake for 5 – 10 minutes until partially soft.
Melt the coconut oil in a pan and add the honey. Mix well then remove from the heat.
Weigh out the oats and pour into a large bowl. Add the sultanas, nut butter, melted coconut/honey mixture and the cinnamon. Stir well.
Grate the remaining apple and mix in. Add the desiccated coconut and pumpkin seeds. Once the mixture is evenly combined, pour onto a greased baking tray and top with the spiced apples. Bake in the oven on 180c for 20 minutes until firm and cooked through.
Leave to cool then slice into portions.
Enjoy straight away or store in an airtight container for snacking throughout the week. Yum!
