Coconut, Pomegranate and Fig
Ingredients
40g Rolled Porridge Oats
1tsp Chia Seeds
200ml Coconut Milk (or milk of choice)
1tsp (heaped) Nut butter of choice
1tsp Coconut – flaked, desiccated or both
1 Small Fig
Berries of choice
Pomegranate
Method
Pour the oats into a pan and add the chia seeds and milk. Mix well.
Cook on a low heat, stirring thoroughly until the porridge reaches desired consistency.
Add more milk if it looks too thick.
Once the oats are cooked through, spoon into a bowl before adding your toppings.
I went for fig, berries, nut butter and coconut! Enjoy!

½ Grated Carrot
200ml Milk (of choice)
2 Dates / 1tsp Sultanas
1tsp Chia Seeds
1tsp Pumpkin Seeds
1tsp Ground Cinnamon
1tsp Ground Ginger
Sprinkle of Walnuts / Pecans
Method
Grate your carrot.
Add the porridge oats and chia seeds to a pan and pour over the milk until the oats are covered.
Stir in the chopped dates, pumpkin seeds and ground spices. Add the grated carrot and mix well.
Leave to simmer until mixture thickens and oats are fully cooked.
Serve with a sprinkle of cinnamon and nuts on top.
Dessert for breakfast?! Yum!
Pink Porridge
40g Oats
1tsp Chia Seed
1tsp Flaxseed
Milk of choice
1tbsp Frozen Berries
Toppings of Choice, I went for:
Fresh Fruit
Coconut
Pour the oats into a pan and add the chia seeds, flax seeds and milk. Mix well.
Begin to cook on a low heat, stirring thoroughly throughout.
Once the mixture begins to thicken, add the frozen berries.
Cook further until they soften into the mixture and the colour of the oats begin to change.
Once the fruit has cooked through and the porridge has reached desired consistency, it is ready to serve!
Remember to add more milk if it looks too thick.
Spoon the mixture in a bowl and add toppings of choice!
