175g Rolled Oats
2 Ripe Bananas
75g Pecans
25g Dessicated Coconut
5 Dates
1tbsp Tahini
1/2tsp Bicarbonate Soda
1 Handful of Chopped Frozen or Fresh Berries
Method
Add the pecans, coconut, de-stoned dates and bananas to a blender. Spoon in the tahini and bicarbonate soda then blitz.
Once smooth, add the mixture to a large bowl before gradually adding the oats. Mix until the oats are stirred in evenly.
Slice the berries and then add them to the mixture, leaving some for topping.
Grease a loaf tin and spoon in the oat mixture, pressing so that the mixture is compact.
Add the sliced berries to the top of the oat mixture.
Bake in the oven for 35 mintutes on 180c, checking throughout.
Enjoy as a snack or with yogurt and berries as part of a healthy breakfast!
