Romaine Lettuce Leaves
200g Black Beans
1/4 Mango
1/4 Avocado
1/5 Cucumber
Small handful of Cherry Tomatoes
Juice of 1 Lime
Chilli Flakes
Salt and Pepper
Fresh Coriander
Sesame Seeds
Tahini Dressing:
2tsp Tahini
1tsp Soy Sauce / Tamari
Juice of 1 Lime
1 Clove of Garlic
Chilli Flakes
Fresh Coriander
Rinse the lettuce. Place the leaves on a plate ready to fill.
Drain and rinse the black beans, place on a baking tray and drizzle in olive oil. Season with salt and pepper, chilli flakes and squeeze over half of the lime. Bake for 15 minutes.
Finely slice the mango, avocado, tomatoes and cucumber. Mix together to make the salsa. Sprinkle over the fresh coriander and squeeze over the remaining lime.
Once the black beans have cooked, stir into the salsa and pour over the lettuce leaves for the taco filling.
Mix dressing ingredients thoroughly until thick and smooth. Drizzle over the tacos.
Sprinkle in sesame seeds and enjoy!
