100g Black Beans
1/4 Sweet Potato
1 Wholemeal Wrap
Veggies of choice, I went for mushrooms, spinach and tomatoes.
Juice of a Lime
Olive Oil for cooking
Salt and Pepper
Optional Harrisa drizzle
Dice sweet potato, drizzle in olive oil and season with salt and pepper. Roast in the oven for 20 minutes.
Drain and rinse black beans, spoon into a pan and pour over boiling water. Simmer on a low heat for 10 minutes. Drain, season with salt and pepper and squeeze over 1/2 of the lime. Mix in the sweetcorn.
Finely slice vegetables of choice and pan fry in olive oil until cooked through.
Scramble the eggs and slice the avocado.
Place the wholemeal wrap in the oven for 5 minutes.
Build your burrito!
Take the warm burrito out of the oven and add the sweet potato and the black bean - sweetcorn mix.
Top with the stir fried veggies and scrambled eggs.
Add the avocado and sprinkle over some fresh coriander.
Squeeze over the remaining lime and add a drizzle of harrisa if you would like.
