4 Eggs
Olive Oil for cooking
Salt & Pepper
Feta (optional)
Chilli Flakes
2 Cloves of Garlic
Your choice of Green Vegetables, I went for:
Kale
Spinach
Broccoli
Spring Onion
Peas
Courgette
Wild Garlic Pesto (optional) - see recipe in 'Dinner Recipes'
Crush the garlic and chop the chilli. Add both spices to a large pan with some olive oil.
Chop your chosen green vegetables and add to the pan. Fry until cooked through and then pour in any leafy greens.
Once the green vegetables are cooked and the leafy greens wilted, make 4 small circle shapes in the mixture so that the bottom of the pan is visible.
Crack the 4 eggs into the empty circles and leave the pan on a low heat to cook the eggs gradually.
Pre-heat grill.
Once you can see that the bottom of the eggs are firm, place the pan under the grill for 5 minutes to cook the top of the eggs.
Optional: Crumble some feta over the top of the eggs and drizzle with pesto.
Serve alone, with toast, or with some avocado as an extra addition of green! Enjoy!
