Spinach / Mixed leaf

Tahini dressing: Tahini, soy sauce, lime juice, crushed garlic, chilli flakes.
Black Beans: Pour the black beans into a pan with boiling water and simmer for 10 minutes. Drain then pour back into the pan without any water. Add crushed garlic, coriander, chilli flakes, lime juice and a drizzle of olive oil and then mash with large fork / potato masher until you reach desired consistency.
Re-heat just before serving.
Sweet Potato: Cube your sweet potato, drizzle in olive oil, salt and pepper then bake in the oven for 25-30 minutes.
Roasted Pepper/ Onion: Slice, coat in oil and roast for 15 minutes.
Rice: Cook according to instructions on packet.
Avocado: Mash, season and serve.
Tahini Dressing: Add 1tbsp of tahini to a small bowl with the juice of a lime. Stir. Pour in 2tsp of soy sauce and add the spices. Mix well. You could also add a small squeeze of honey for a slightly sweeter taste.
To serve: Add the spinach and sweetcorn to a bowl before adding the other cooked ingredients.
Drizzle over the dressing and enjoy!
