Lentil & Mushroom Burgers
Makes 4
140g Puy Lentils
100g Mushrooms
2tbsp Flour (I used Buckwheat flour as it's all I had in, plain would be fine too)
1tsp Tahini
Juice of 1 Lime
Small handful of fresh Coriander
2 Finely chopped Spring Onions
1 Clove of Garlic
1tsp Chilli Flakes
Method
Cook the puy lentils following cooking instructions on packet. Rinse then chop the mushrooms and pan fry until softened.
Slice the garlic and other fresh herbs and spices. Finely chop the spring onion.
Add all herbs and spices to a blender, along with the spring onion, tahini and lime juice.
Once cooled, pour in the cooked mushrooms and lentils. Blend until the mixture reaches a smoother consistency (works well if there is still some lumps and bumps to add texture).
Once blended, mould the mixture into your desired burger shape and size.
Season with salt and pepper.
Your cooking method depends on what is available to you.
Working great on the BBQ, flipping throughout, however also just as easy to bake/ pan fry.
If baking:
Place each burger on a baking tray and drizzle in olive oil. Cook on 190c for 20 - 25 minutes, flipping once throughout.
If frying:
Add some olive oil to a large pan add gently place in the burgers. Flip throughout and leave on the heat until cooked through (approx 10 minutes).
Enjoy the burgers in a bun or as part of a bbq spread!

1/2 Mango
1 small Avocado
1/4 Cucumber
Handful of Cherry Tomatoes
2 finely chopped Spring Onions
Juice of a Lime
Handful of fresh Coriander
1tsp Chilli Flakes
Salt & Pepper to season
Method
Dice the mango and avocado to similar sized cubes.
Chop the cucumber, tomatoes and spring onion into small slices and mix in with the mango and avocado.
Squeeze over the lime and add the fresh herbs and seasoning.
Serve as part of a salad or a side dish to your BBQ.
Halloumi & Vegetable Skewers
You can make these with whatever vegetables you have in the fridge!
Just chop the veggies into large chunks, add them to a skewer with the halloumi and repeat!
The skewers taste delicious if you marinate your vegetables first, however I just seasoned mine with salt & pepper, drizzled them in olive oil and added a dollop of good quality harissa when they were almost cooked.
Cook in the oven or on the BBQ. If opting for oven, cook on 180c for 15-20 minutes, flipping throughout.
