Ingredients
Makes 4 Fritters
1/2 Red onion
1 Clove of Garlic
2 Eggs
50g Plain flour (or a gluten free option - I used Buckwheat flour)
1 Small tin of Sweetcorn
Cayenne pepper/ Chilli flakes
Juice of 1 Lemon
Olive oil
Salt & Pepper
Chop the onion and garlic into small pieces. Add to a pan with olive oil and fry for around 5 minutes until golden.
Add all of the dry ingredients to a large bowl and mix.
Whisk 2 eggs in a separate bowl and then add gradually to the dry ingredients before pouring in the cooked onions.
Drain the sweetcorn and then spoon into the rest of the mixture, stirring thoroughly.
Squeeze in the lemon. Season with salt and pepper.
Once ready to cook, the mixture should be thick.
Drizzle some olive oil into a hot pan. Spoon some of the mixture into the pan gently, creating your desired fritter shape and size. Repeat with each fritter.
Leave to cook for a couple of minutes and then flip.
Once fritters are cooked through, serve hot with smashed avocado and a poached egg! Enjoy!
