Cacao and Orange balls
200g Almonds
150g Dates
2tbsp Cacao Powder
1tbsp Oats
2tsp Cinnamon
Juice of 1 large orange
Pinch of salt
Method
Soak the dates in boiling water for 10 minutes until they soften.
Blitz the nuts in the food processor/ blender until they make a sawdust type consistency.
Add the dates to the nut mix and blend again until mixture becomes thick and soft.
Pour in the cacao, ground spices and squeeze in the orange.
Remove from the blender and roll into bite size balls.
Refridgerate to set before eating.
Lemon, Ginger and Coconut balls
250g Almonds / Cashews
150g Dates
2tbsp Oats
Juice of 1 lemon
2tsp Ground ginger
1tsp Ground cinnamon
1tsp Ground turmeric
1tbsp Desiccated coconut (save some for coating)
Soak the dates in boiling water.
Add the nuts to the blender and blitz until ground. You could use a mixture of the two nuts instead of one or the other if you wish.
Pour in the ground spices, oats and the majority of the coconut and blend again.
Gradually add the soaked dates, blending, stirring and then adding more until consistency is thick and mixture has combined.
Spoon from the blender and roll into bitesize balls. Coat with leftover desiccated coconut.
Store in an airtight box and refridgerate until consumption.
