Ingredients
Serves 3
100g Porridge oats
150ml Oat Milk (or milk of choice)
200ml Water
2tsp Chia seeds
1tsp Ground Cinnamon
1tsp Ground Ginger
2 bananas (1 mashed inside oat mixture and one cut in half to go on top)
1tbsp Walnuts (or nuts of choice)
Serve with:
Yogurt
Flaxseeds
Your choice of fruit - I went for baked apples and fig.
Method
Pour 100g of oats into an oven proof bowl and mix in the chia seeds and spices. Stir.
Mash one of the bananas and mix into the oats.
Gradually add the oat milk and water to the mixture, stirring as you go.
Once the oats are covered, cut the remaining banana in half length ways and place it on top of the porridge mixture before sprinkling with walnuts.
Put the bowl in the oven for 20 minutes, checking throughout.
Once the oats are set and cooked through, serve into three dishes, hot with your choice of toppings.
I went for yogurt, seasonal fruit and some flaxseed.
