Ingredients
100g Jumbo Oats
100g Almonds
15 Dates
2 Carrots
2tbsp Pumpkin Seeds
150ml Oat Milk
2tsp Ground Cinnamon
2tsp Ground Ginger
Pinch of Salt
Coconut oil (to grease)
Soak the dates in boiling water for 5 - 10 minutes.
Blitz the almonds and then add the drained dates to the blender with a pinch of salt, blend until thick.
Add the oats to a pan, on a low heat with the pumpkin seeds and ground spices.
Stir in the date and almond paste, mixing thoroughly.
Grate the carrots and add them to the mixture with the oat milk and stir.
Once thick, pour into a greased baking tray and bake on 180c for 30 minutes.
Leave to cool then slice and enjoy!
