250g dry Red Lentils
2 medium Sweet Potatoes
1 large Onion
1 Pepper
1 large handful of Spinach
1 tin of Chopped Tomatoes
1 tin of Coconut Milk
Garlic, Chilli, Ginger, Coriander
1 tbsp Turmeric
1 tsp Cumin
1 tsp Cayenne Pepper
1 tsp Coconut Oil
Serve with Brown or Wild Rice & Greens
Peel and chop the sweet potato. Chop the onions, pepper, herbs and spices.
Add the coconut oil to a pan and pour in the garlic, chilli, ginger and onions. Stir until golden.
Add the pepper and ground spices, stirring thoroughly.
Pour in the cubed sweet potato and dried lentils and then add the tinned tomatoes and coconut milk. Mix.
Add 1/2 pint of boiling water, bring mixture to the boil and then simmer.
Stir often, adding boiling water throughout if the mixture is looking too thick.
Simmer for 40 minutes until the lentils and sweet potato are fully cooked.
Add spinach and the juice of a lime.
Garnish with coriander and serve with rice and greens. Enjoy!
