Ingredients
Makes large batch
3 Sweet Potatoes
1 Head of Broccoli
½ bag of Kale
½ bag of Spinach
2 Parsnips
2 Carrots
2 sticks of Celery
1 Onion
Garlic, Chilli, Ginger
Cumin, Salt & Pepper
Juice of a lemon
Vegetable stock
1l of Boiling water
Method
Chop then steam the Sweet Potatoes.
Chop the other vegetables.
Pan fry the onion, celery, herbs and spices.
Add the cooked Sweet Potato and the rest of the vegetables to the pan. Pour in the stock.
Boil and then simmer for 20 minutes.
Add the lemon juice and blend.
Optional: Add seeds, chilli flakes and a drizzle of tahini as a topping.
